Barrel-Aged Gin Martini
The slight taste of oak from the barrel-aged vermouth give this classic martini a slightly less dry flavour with a touch of smokeyness that blends well with the slightly sweet, earthy Canadian gin used to make it.
- 2 oz Canadian botanical gin (Ungava, Liberty Endeavour Pink Gin)
- 1.5 oz barrel-aged dry vermouth
- Pickled onion for garnish
Fill a charred-oak barrel with sweet vermouth and age in a dark, cool place for two weeks. Combine the barrel-aged vermouth and gin in a mixing pitcher over ice. Stir well until chilled. Strain into a martini glass or a coupe glass. Garnish with a pickled onion. Enjoy chilled.
